Brush bread with olive oil and grill on an outdoor grill or indoor griddle pan. Set aside.
Brush the steaks with olive oil and season with salt and pepper. Grill for 2-3 minutes on each side, or to desired temperature.
Remove the steaks from the grill or griddle pan and set aside to rest for a few minutes.
Arrange arugula on bottom or slice of bread, place steak on top of arugula, then sprinkle on some Gorgonzola cheese. Slice sandwich and serve.
