Orange and Pomegranate Salad

  • 6 cups of mixed greens
  • 1 cup of mandarin oranges, drained
  • 1/3 cup pomegranate seeds
  • 2 tablespoons of canola oil
  • 1/4 cup of pomegranate juice
  • 2 tablespoons of lemon juice
  • 2 teaspoons prepared Dijon-style mustard
  • 1 tablespoon honey
  • Freshly ground black pepper
  • 1/4 cup of crumbled Feta cheese

Divide the lettuce between 4 salad plates. Divide Mandarin oranges and pomegranate seeds between the 4 salad plates.

Combine the canola oil, pomegranate juice, lemon juice, Mustard, honey and pepper in a saucepan. Bring to a boil Over high heat; reduce heat and simmer, stirring frequently, Until the dressing thickens slightly, about 2 minutes.

Pour the warm dressing over the salads, sprinkle with Feta cheese and serve.
